Easy Mini Quiches for the Holidays (or any party)

As you are probably aware by now, the holidays are fast approaching.  That means holiday parties of all varieties, office parties, cocktail parties, dinner get-togethers, and of course the big family gatherings.  All require you to contribute something, am I right?  And if you are anything like me, you are swamped with random and sundry other things.  Like work.  Or watching bootlegged copies of Downton Abbey.  You could always bring the obligatory bottle of wine, but why not put forth a teensy bit of effort and make a hot appetizer?  You might find yourself the hero of the party and really, it only took you about ten minutes of active cooking.

Yes, you are going to be using convenience products for this.  I will say though, that these convenience products are ok in my book.  La Terra Fina is a company founded by a San Francisco caterer (we can get behind this, right?) that is still located in the East Bay–Union City to be exact (or Onion City, as I called it as a kid).  I don’t usually purchase ready-made products like this because they are pretty easy to make, but I was curious when they approached me.  La Terra Fina supplied me with a couple of their dips to try….and while I couldn’t stop myself from eating some straight out of the tub with tortilla chips, I did manage to save enough for these tasty little bites.

(Note:  If you are vehemently opposed to any purchased convenience foods, even those that are made with all-natural, actually readable ingredients, please feel free to make the dip yourself.  Like this one from Nana.)

I used roll-up pie crusts too, because, well, I am just plain lazy and I use these all the time.  Don’t judge.  I can tell you that no one knew any difference because these were devoured in about ten minutes after placing the platter on the table.

Easy Mini Quiches


  • 1 cup chunky dip, I used La Terra Fina's Artichoke and Jalapeno, Spinach Dip, or any similar
  • 2 pie crusts, either roll-up or homemade
  • 3 eggs
  • splash milk or water
  • 1/2 cup Monterey Jack cheese, shredded
  • black pepper


  • Preheat oven to 350.
  • Spray or grease 3 mini-muffin pans.
  • Roll out the pie crusts and cut with an approximately 3-inch cutter, or the top of a glass. Fit the circles into the mini-muffin cups. (The pastry should come up to the top of the cup. Adjust the size if necessary.)
  • Using a teaspoon or melon baller, place about 1 Tbsp chunky dip into each muffin cup.
  • Beat eggs with the splash of milk or water and season with some black pepper. Pour into each muffin cup.
  • Add a pinch of shredded Monterey Jack on top of each quiche.
  • Bake approximately 10 minutes, or until puffed and golden.
