Grilled Swiss Cheese Sandwich with Sautéed Onions and Mustard

Not that any sane person should be eating grilled cheese sandwiches for days in a row, but hey, sometimes it’s fun to read about it.  And think of it this way. Zane and I ate all of these sandwiches on ONE NIGHT.  At least we shared them.

This one was simple.  Just sautéed onions, Swiss cheese and some decent mustard.  Mine was Sierra Nevada’s Pale Ale and Honey Spice mustard.  You can get it at the grocery store, but Zaney got it for me at the brewery in Chico. He’s a super nice boy and does nice things like that for his mother.

Just grill it up on some buttered bread over medium heat.  If, for some strange reason, the bread is browning and the cheese isn’t getting all melty, you can cover it for a minute to help it along.  Don’t keep it covered for too long or the bread won’t stay crispy.

The marriage of cheese, onion and mustard is a match made in heaven.  It’s a pretty perfect combo.  The only thing that could possibly make this sandwich any better is if you could find any pretzel bread to make it on.  DROOL.

This sandwich is a perfect ending to a long day.  Have it alongside a salad or even a little cup of soup.  Maybe a little fire in the hearth and your feet up on the coffee table.  Take a bite and relax, you’re home.

Grilled Swiss Cheese Sandwich with Sautéed Onions and Mustard

Ingredients

  • FOR ONE SANDWICH:
  • 2 slice whole wheat or pretzel bread
  • 3 slices Swiss cheese
  • Sierra Nevada Pale Ale Honey and Spice mustard, or other mustard of your choice
  • 1/4 onion, thinly sliced
  • 1/2 Tbsp butter
  • 1 Tbsp olive oil, such as Bariani
  • salt, pepper

Instructions

  • Heat sauté pan over medium heat. Add oil and butter. Saute onions until soft. Season with salt and pepper. Remove from pan.
  • Lightly butter bread on one side.
  • On other side, place 1 1/2 slice cheese on each slice of bread.
  • Add onions to one piece of bread. Top with the second slice.
  • Place in pre-heated pan. Grill on both sides over medium heat until toasted and brown.
  • Serve immediately.
