So this is it, Readers. The end of the road. Of Grilled Cheese Week, that is. There’s only so much grilled cheese I can take. Although I’ll be honest, if someone were to make me this sandwich right now I wouldn’t wave it off.
If Brie and Gorgonzola got together and had a child, that baby would be Cambazola. And what a fine, soft and funky little baby it would be.
This is a pretty simple idea really. Who doesn’t like a little sweet and savory thing? A little cheese-and-jam combo? It’s hard to resist it’s siren call even when it’s just sitting there on a cheese board, but together, melted in a toasty sandwich? Bitch, please.
Make sure you cook this one on medium or even lower. You go high heat and all that soft cheese will run out and ooze all over the pan and you’ll be sad that you’ll have to re-make your sandwich. Maybe even sadder because Cambazola ain’t cheap and you just wasted it by letting it melt into oblivion.
Get it nice and toasty then serve it immediately, taking care not to drip that melty Cambazola down the front of your shirt. ENJOY!
