Cream Cheese Frosting

by Undercover Caterer on January 15, 2012

Mr. DeMille, the frosting is ready for it's close up.

What?  I’m posting on a Sunday?  I know, it’s weird.  But I was on the Tee Vee this morning.  I know, again…weird.  More weird that I was up so dang early on a Sunday!  Ha ha hee hee.  I’m not much of an early riser.  I made my semi-famous cream cheese frosting on the show.   I realized when they asked that I don’t have a stand-alone post for cream cheese frosting.  So I figured I better make one.  You know, in case people look for it.  Duh.

I made some other things, for the magic of TV…if anyone is interested in the recipes they are here:  Nana’s Cinnamon Rolls, James Beard’s Onion Sandwiches, Snickerdoodle Cupcake Hack, and Horseradish Deviled Eggs with Candied Bacon.

Here it is, the superstar “perfect” cream cheese frosting.

Cream Cheese Frosting

Ingredients

  • 1 cup unsalted butter, softened
  • 2 packages cream cheese, softened
  • 2 cups confectioner’s sugar
  • 1/2 lemon, juiced
  • 1 Tbsp vanilla

Instructions

  1. In a mixer, thoroughly mix the butter and cream cheese.
  2. Add sugar, lemon juice and vanilla.
  3. Mix again.
  4. This recipe makes enough frosting for 48 cupcakes, halve if needed.

I’ve been on a pretty much sugar-butter-everything-I-live-for-free diet. Now I want to dive into a bowl of this. You looked so cute :) Fun!

Sarah, you were great! I’m so happy that I can say I know someone who was on TV! Your cream cheese frosting is the bomb! Everyone should try it, I promise it will be your go to frosting. Taste it on red velvet cupcakes too.
