Nana Recipe Wednesday–Japanese Chicken Salad

Oh crap, it’s Thursday isn’t it?

Sue me. I got all screwed up with the holiday this week.

Well Nana didn’t forget you and neither did I.  I just simply got my days messed up.  So listen, how do you feel about a Japanese chicken salad that involves instant ramen?  I feel pretty good about it.  Nana likes it too.  You can make it in advance even–the cabbage doesn’t wilt like regular old lettuce will.

Nana and Boppa had a few connections in Japan so they traveled there fairly frequently.  Nana’s youngest sister, Sister Marie, taught there for many years and even brought students over here to visit.  Nana and Boppa would always host a big barbecue party while they were here.  Nana and Boppa also hosted a Japanese exchange student, Takako, while I was a little kid.  She taught me how to use chopsticks and how to count and say a few basic things in Japanese.  Unfortunately I’ve forgotten most of it–I can only count to four now.  Ichi.  Ni.  San.  Shi.

Alrighty then, let’s do this. You might as well start with the fun part, which is bashing the shit out of the package of ramen so it’s all broken up into tiny bits.

Save that package of brothy stuff!  It’s full of salt and msg and all kinds of nasty stuff and tastes real good in the dressing.

As you can see, this recipe is very difficult.  Or, 非常に困難.  I’m just kidding.  Just chop it all up and throw it in a bowl.

Toss in the dressing, taste it to see if it needs seasoning and that’s it.

This is by no means a fancy meal but it’s great if you’re running late, or you want something good to take to a pot luck party or if you’re just craving some instant ramen noodles.

Nana Recipe Wednesday–Japanese Chicken Salad


  • 1 small head cabbage, shredded or cut thin
  • 3 green onions, chopped
  • 4 chicken breasts, cooked and shredded (can use any leftover or rotisserie chicken)
  • 1 package chicken flavor instant ramen, broken into small pieces, broth packet reserved
  • 2 Tbsp toasted sesame seeds
  • 1 cup cilantro
  • 2 Tbsp sugar
  • 1/2 cup salad oil
  • 1/4 cup rice vinegar
  • 1 Tbsp sesame oil


  • In a small bowl, whisk together the oil, sugar, vinegar, sesame oil and ramen broth packet. Set aside.
  • Mix cabbage, onions, chicken, cilantro and ramen noodles together in a large bowl. Pour dressing over the salad and toss. Taste and season with salt and pepper.
