I Heart Baked Potato

Today I was feeling the need.  The need for carbs.  Starch.  Comfort.  Love.

Carb comfort.

I thought about making mac and cheese but didn’t really feel the need for all that grating, cooking, fat, calories, etc.

The simple potato.

Sometimes simplicity is just what the doctor ordered.  A little olive oil, kosher salt, a hot oven.  It’s a crisp-on-the-outside, fluffy-on-the-inside hunk of happiness.

I call this dinner.

Garnished with a sliver of butter, a couple of tablespoons of sour cream, salt, pepper and a few snips of garlic chive and onion chive.  I didn’t miss the steak one bit.

Perfect Baked Potato

Potato(es)
Olive oil
Kosher or sea salt

Preheat oven to 375*.

Rub clean potatoes with olive oil and salt. Place in the center of the oven, directly on the rack. Bake for approximately 1 hour to 75 minutes, until the skins are crispy and they look a little puffed. The potatoes should squish easily and/or a fork will insert into the skin easily.

Garnish with butter, sour cream, salt, pepper, chives, cheese or whatever else you wish.
