Today I was feeling the need. The need for carbs. Starch. Comfort. Love.
I thought about making mac and cheese but didn’t really feel the need for all that grating, cooking, fat, calories, etc.
Sometimes simplicity is just what the doctor ordered. A little olive oil, kosher salt, a hot oven. It’s a crisp-on-the-outside, fluffy-on-the-inside hunk of happiness.
Garnished with a sliver of butter, a couple of tablespoons of sour cream, salt, pepper and a few snips of garlic chive and onion chive. I didn’t miss the steak one bit.
Ingredients
- Potato(es)
- Olive oil
- Kosher or sea salt
Instructions
- Preheat oven to 375*.
- Rub clean potatoes with olive oil and salt. Place in the center of the oven, directly on the rack. Bake for approximately 1 hour to 75 minutes, until the skins are crispy and they look a little puffed. The potatoes should squish easily and/or a fork will insert into the skin easily.
- Garnish with butter, sour cream, salt, pepper, chives, cheese or whatever else you wish.
