I made this creamy little sauce–with a kick–at a recent party that featured prime rib. You know, the prime rib that I showed you yesterday. It couldn’t have been easier to whip together.
The ingredients may even be things that are already hanging out in your refrigerator door.
Step one: Mix it together.

I always like to garnish sauces with a little of the herb–or one of the ingredients, at least–that is part of the sauce. It gives a little hint of what’s in there.
I also make this horseradish cream for a little steak sandwich canape, and it would also be good on a steak or roast beef sandwich. I bet you can think of other ways to use it!

Horseradish Cream Sauce
(to make approximately one cup)
1 cup sour cream
1/4 or more horseradish (I particularly like the extra-hot variety)
2-3 Tbsp chopped fresh chives (plus an extra chive or two for garnish)
freshly ground pepper to taste

Mix together sour cream, horseradish, chives and pepper. Adjust seasonings to taste.
Garnish with extra snipped chives.
