Pizza Day 6! Buffalo Chicken Pizza

by Sarah on March 5, 2011

I wasn’t kidding when I said Pizza WEEK, dudes. All seven days.

I’m not breaking any sonic barriers with this one but you can’t really have a “big game” without the wings.  Those football types like the wings.  I just had to do a take on a buffalo chicken pizza.

I have to admit, I don’t like buffalo wings.   I just don’t.  The deep fried part?  The margarine?  The hot sauce and blue cheese?  I like all the components, but I don’t seem to like them combined.    I know, it’s practically un-American.

Obviously this is a no-brainer.  I shredded some leftover grilled chicken and tossed it with the Frank’s wing sauce.  You could make wing sauce with Frank’s Hot Sauce and margarine, but I didn’t wanna.

Stretch or roll out the pizza dough, then ladle on the blue cheese dressing.  Top with the chicken, then scatter on some thin slices of celery and some celery leaves.  Top with a few chunks of mozzarella.  You could put a few chunks of blue cheese on too, I just didn’t have any.  Finish with some freshly ground pepper.

Cook on hot hot hot for a few minutes, until everything’s bubbly.

It’s really pretty good.  Way better than wings.

Pizza Day 6! Buffalo Chicken Pizza

  • Pizza dough, enough for a 10-12" pizza
  • 1/3 cup or more blue cheese dressing
  • Approximately 1/2 cup shredded chicken
  • 1/4-1/3 cup Frank's Wing Sauce
  • 2 interior ribs celery, sliced, leaves reserved
  • 5-6 small chunks mozzarella, crumbles of blue cheese, if desired
  • freshly ground pepper

  • Preheat oven to the highest setting. Place the pizza stone on the center rack.
  • Toss the chicken in the wing sauce, set aside. Stretch or roll dough to a 1/4" thickness and place on the peel that has been liberally coated with cornmeal or flour. Spread on the blue cheese dressing, toss on the sauced chicken, then sprinkle on the sliced celery and celery leaves. Top with the chunks of cheese and pepper.
  • Slide on the pizza stone and cook until browned and bubbly.
