Mangoes & Olives for Dessert. Mango Upside-Down Cake and Olive Oil Ice Cream

Mangoes for dessert, sure. But olives?  Yeah.

Thank goodness for Vanilla Garlic!  He had a delicious-sounding Vanilla-Olive Oil ice cream over on his blog and I decided to give it a whirl.  You have to infuse the oil for a week or so, and I only had 4 days.  I ended up using a smidge of vanilla extract also, but otherwise did exactly as he said.  Go on over to Vanilla Garlic to get the recipe and instructions.

What goes with ice cream?  CAKE!

How about a mango upside-down cake?

I used 2  mangos, sliced.

Put them in a bowl and squeeze some lime over them.

In an oven-proof, non-stick 8″ saute pan, melt a Tbsp of butter and toss in 1/2 cup brown sugar.

Coat the sugar with the butter, then spread it over the bottom of the pan.

Arrange the mangoes on top of the sugar.

Prepare a box of yellow cake mix according to the package directions.  Pour over the mangoes.

Bake in the oven at 350* for about 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Let cool for a little while, go around the edges of the cake with a knife, then invert a plate on top of the pan and flip.  The cake should plop onto the plate.

It comes out so pretty!

And there you have it.  Mangoes and olives for dessert.  Yum.


Mango Upside-Down Cake

2 ripe mangoes, sliced thin

juice of 1/2 lime

1/2 cup brown sugar

1 Tbsp butter

1 box yellow cake mix, prepared as directed


Preheat oven to 350*.

Toss mango slices with lime juice.  Melt butter in an 8″ non-stick, oven-proof saute pan.  Add sugar, and stir to coat with butter.  Spread the sugar on the bottom on the pan.  Arrange the mangoes on top of the sugar.  Pour the prepared cake batter on top of the mangoes.

Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

When the cake has cooled slightly, place an inverted plate on top of the pan.  Quickly flip the plate over so that the cake will fall onto the plate.  Let cool completely before serving.
