Very Early Harvest Dinner

I made my first dinner with mostly things from my yard the other night. It was very satisfying, particularly because I was too lazy to go to the store and buy groceries. It was helpful to start off with some leftover pasta and pasta scraps that we were gifted by Pasta Dave at Mulvaney’s one night (thanks Dave!). Boil fresh pasta about 3 minutes in fairly salty water. The noodles will float when they’re done.

Mostly what I’ve got right now is squash. Zucchini and yellow crooknecks. I also had a couple of little cherry tomatoes. I sauteed the squash in a combo of butter and olive oil and seasoned with salt and pepper. I added some frozen peas too, just for fun.

When the pasta’s mostly done, transfer it to the saucepan with the veg.

Toss it around, add some Parm and chives, and voila! Dinner is served.
